Sheet pancakes

We ADORE pancakes in our house, but sometimes I just don't fancy standing by the pan making making them for 20 minutes until we have a bundle ready for everyone to eat!

Sheet pancakes have changed everything! They are ridiculously easy and I will definitely be making these more often.  We made these gluten free but you can use regular self raising flour if you prefer.

INGREDIENTS:

1 mug Gluten Free Self raising Flour

1 egg

1 mug of dairy free milk alternative

1 tbsp of coconut sugar

2 tbsp of oats

Toppings of your choice.  We used blueberries and dark chocolate chips.

METHOD:

In a large bowl, mix the flour, oats, sugar together until combined.

In a separate jug whisk the egg and milk until combined.

Add the milk and egg mix to the dry ingredients and mix until everything is mixed together and a batter has formed.

Line a baking tray with greaseproof paper and pour the entire pancake batter into the baking tray, spreading it out evenly.

Top with the toppings of your choice and bake in the oven at 180c for between 15-17 minutes or until a skewer inserted into the middle of the pancake comes out clean.

Allow to cool a little before cutting into squares and serving.
